Engine monitoring for truckputer?

Hey guys, I'm in the early planning phase of installing a 1U rackmount PC into my truck under the back seat (crew cab). I know all about an OBD II Interface for RS232, but I want monitoring of a different color. I have a Diesel engine in my 2000 F250 and I plan on adding a chip intake and exauhst. With those mods, comes the need for a Pyrometer, Boost gauge, and Transmission oil Temperature gauge. I'd like for the truck to instead of having a three gauge pod mounted on the A Pillar or under the dash. Have all three readouts on the Touch LCD I plan to install for the computer display. Is it even possible to rig up the senders from these gauges to a Serial Port? or would I need some kind of special interface board for the sender units? I just wanna know if it's something worth doing, or if I should just invest in some autometer gauges.
 
Wow, that seems like a heavy project ...

Were I you, I'll rather look into automotive modding forums, as they are more likely to answer your questions ^_^;
