e-mail signature tracking

Our office just switched from GroupWise to MS Exchange. In GroupWise I was able to track who opened my mail messages through the GW client. With Exchange it looks like the only way I can track who opened my messages is by sending them a receipt that they have to send back. The problem with that is they can click 'no' and I never know if they open the message or not.

My 'plan' was to create a signature with our company logo in it and host it on my webspace. I wanted to try to throw some code in somewhere, either in the signature of the message or on my webhost, to somehow track the machine name of the user that pulls the image from my webspace.

Can this be done??

If I can prove I sent it, and if they didn't read it, that's on them.

I also think Outlook would stop the execution of scripts in the email and mark them malicious, since, well, it is.
 
The image tracking idea can be done, but if the user's email client does not allow the image to be displayed, which is the default in many email clients today, it will not be tracked.
