Disclaimer: I am not a linux sysadmin, i just know how to follow directions :)

I have this issue where everytime i go to provision a CentOS VM, it fails to initiate the eth0 interface because there is a mismatch between what the system thinks the MAC address should be and what Vmware has generated for the new VM.

I have been having to edit the /etc/sysconfig/network-scripts/ifcfg-eht0 and manually modifying the HWADDR attribute to match what the hypervisor was generating.

I then tried deleting the field altogether, made a full clone and see if it would work because there would not be a value to cause a mismatch, but it just fails to initialize and then i have to go add anyway.

I cant imagine that everyone is doing this, and i must have just missed something.

are you using a customization script for it? If so, that shouldn't happen. If not, then use a customization script :)
