I am trying to figure out how to extract the audio off of a DVD, burn it to a CD, and then ultimately play it in my car. Does anyone know of a good program that would allow me to do this?
 
By extracting DVD audio, do you mean the Dolby Digital track from a standard DVD, or the MLP track from an actual DVD-Audio disc?

If it's Dolby Digital, AC32WAV will do the trick. If it's MLP, I don't think any tools are available yet - they just recently broke the encryption on that.
 
I want to take a regular DVD movie, and copy just the audio on it, so that I can listen to the movie in my car.
