If I have a dual channel capable board, do I have to buy memory that is labeled dual channel, or just identical pairs? thanks

Just identical parts. The RAM that's specifically packaged as "dual-channel" is just manufactured at the same time, and comes from the same batch. If you buy two sticks at the same time, you should be just fine, but you do run the risk that the RAM's from different batches, and the tolerances are different enough that it may not work in dual-channel mode.

The price difference between non-dual-channel-labelled and dual-channel labelled RAM is minimal, so if this makes you nervous, I'd recommend just getting the pre-paired RAM.
