The new Dragon Age patch (1.01b) makes normal difficulty easier and easy difficulty even easier. Just google for the patch if you don't have it already.
 
What do you expect? If you have one tank it's much difficult to contain the battle the difficulty doesn't change at all. Mages have to be protected as they are clearly the true force in the group. One tank will not work well as he will be surrounded and outnumbering quickly, even with 2 mages and once he dies it's pretty much over for the mages.

Well I expected to do better then my 1st play thru, tbh. Now before you go all zomgteh1tank on me let me give you a break down off the differences between the two play thrus.

First Time
Player - Tank
Sten - 2h Warrior
Dog - Ankle biter
Morrigan - Various spells (no heals)

This was before any of the patches were released, I had done a couple sidequests to beef up the town defenses but not all of them and I killed the blacksmith and just collected the gear he hid. First part of the fight I hung back by the knights and let them come to me, easy. Second part by the town hall I just stood in with all the NPC guards and duked it out popping health pots when needed. It worked out well as the NPC guards would respawn every now and then to help me out.

Second time
Player - Healing and Frost CC (heal and group heal)
Alistair - Tank
Leliana - Bow Bard
Morrigan - Frost Mage (just heal)

This time I had patched to the 1.01a which supposedly made things easier on normal difficulty. I had done all the sidequests to beef up town defenses, didn't kill the blacksmith, and suggested flaming barrels to the knights. First part on hill was a breeze much like before however the difficulty started in front of the town hall. This time zombies were seriously zerging the hell out of my party and the guards this time around. I kept the pace up with heals and CC but I noticed the guards were not respawning like in my first play through. The boss zombie finally showed up but by this time I had only Alistair and my Player Character alive which means Alistair got smoked and I had to run up to the knights on the hill. Only regular zombies followed me and the knights took them out and I had to run down to the town hall and soloed the boss zombie (quite easily with frost CC and arcance bolts).

Now the two major differences besides party make up between the two play throughs was a patch and the fact that the guards failed me horribly the second time. This had nothing to do with the fact I only had one tank and two mages. This had nothing to do with my play style. It was just random chance that cranked up the difficulty by the guards being wiped out so soon and no reinforcements.
