Does the game experience differ between 480 and 5870/5970?

You will never have the exact same gaming experience between AMD and Nvidia. Now, im not saying that one is going to be better or worse than the other, but there will be differences. Everyone has their or personal preference and some people are alot more picky then others when it comes to graphic options. Most likely you will be satisfied no matter which company you go with.

ATI has the better image quality now with true angle independent filtering. But Nvidia has been close enough since g80.

It's a pretty big tossup between overall better experience for the two, and it still comes down to preference. Some cards run better on nVidia's products, some better on ATI's. Either way faster framerates would not give you a better experience all the time. Past a certain point, higher FPS is not noticable, and most games are easily maxed out by the flagship cards. Generally, all the latest generation fall into the same price/performance bell curve, where more powerful GPUs cost more, so every card is generally a good choice.
To me the biggest differences in gameplay experieces right now would be eyefinity vs 3D gaming. Both have their benifits as well as faults. Some like extreme FOV in games, others hate bezels. Some like the pop of 3D while it gives other people headaches.

Well, I do like some of the cool shit nvidia's phyX can do in games. Does ATI have something similar to this?
not yet. there is suppose to a be havok sku in development on opencl that would allow either manufacture to run physics on the gpu but that is not out yet.If amd wishes i am sure they could pay someone off to do physics with stream but that be same thing nvidia does with phyx. for most game phyx make no difference right now we have to wait a a generation or two for it really start to matter. also does ati does seem to support 3d gaming as well, i not really interested in gaming 3d so i don't know all the detail of that .
