All of the PDF readers should let you save to .txt format. Cutepdf writer should be ok for simple stuff.

Office 2007+10 can save natively to PDF. Save As -> PDF or XPS. Generally I've found that this works better than printing to a PDF printer (even including Adobe PDF from Acrobat Pro). For some reason, the native support saves Office files better.

If you need a virtual printer, there's plenty of them out there, pretty much all the same. I like doPDF and Nitro. (NitroReader will install a PDF reader and virtual printer; if you want the printer only, use PrimoPDF from them.)
 
Microsoft office does it as well. Otherwise just google SomePDF. Its free and you get for word to pdf
