I'm sure it's been done, but how hard is it for someone with a little (what I remember from high school physics) electrical knowledge?
 
Shouldn't be too hard. What kind of control are you thinking of? Just on/off or speed too? All manual or did you want to make a circuit to interpret temperature and adjust accordingly?
 
Speed control but probably with simple circuitry... I seem to be not remembering all that much... I'd like to have them all on separate circuits... I think. I know how I'd incorporate just on/off capability but would the knob control voltage or resistance?

If you know how to solder it's not terribly difficult. You solder a wire or two, poke some holes in a face plate, mount a POT, plug it in, and you're finito.
