I have X-Fi XtremeGamer Fatal1ty.

I think the jack it has is digital coax / rca?

Is it? Does that support 7.1?
 
It it a digital coaxial connection that can transmit S/PDIF, but S/PDIF cannot transmit 7.1 audio.
 
For pretty much all intents and purposes, TOSLINK/optical is the exact same as coaxial, and both can only transmit compressed 5.1. In order to get 7.1, you'd need to use either 8 discrete analog channels, or HDMI.

Yes, both Toslink and digital coaxial transmit the same signal.

They are limited to a maximum of 6.1 channels when transmitting a source encoded into DTS-ES Discrete (though hardly anything uses this).

Any Dolby Digital format or any other DTS format are limited to 5.1 channels (which is what 99% of content uses)

To get 7.1 you need to use 4 discrete analog cables or an HDMI cable.
