SE = "Stripped Edition", ie the bottom of the line.
Pro = average, mainstream version.
XT = the best of the line, for hardcore users.
 
SE as in Schrot Edition, Sux Edition, Stay-Away Edition, Slow Edition. No, its not Special Edition.
 
Well I don't know if I would classify the $400 pro as "mainstream," but it will give you excellent performance in any modern game :) The XT is a step up from that.

Edit: That is, assuming we're talking about x800. In any case, what everyone has said so far is right.
 
You could get a SE and flash the bios to a Pro...
