I'm looking into buying a PowerEdge T410 for a ESX 4.0 server which will run about 10VMs (most will be app servers so i expect little activity).

1. Single or Dual E5620s?

2. How loud is the server, would you put it right next to you?
 
Our T310's are pretty loud. I would stash it in a closet/Datacenter

One E5620 Should be more than enough, You can add a second later if you go nuts with more VM's Make sure you get @ least 8+GB mem though.
 
With 10 VM's I would go for the second proc I would have to much CPU power than not enough. Also with all those VM's make sure you have lots of spindles to run on.
