We had a pile of these at work that had been pulled from working systems. Boss said grab a few. I've been out of the loop on this style of NVME drives. Is there an enclosure or adapter that can make use of these?

According to this it is a PCIe 4.0 x4 nvme drive, likely in a carrier with one or two U.2 connector(s). Even used they are 800-900 so nice gift from your boss!
