I have an oem copy of SBS server 2003 if you are interested in it. Unfortunetly I did use it for 2 months, but I can call and have it deactivated so when you install it you get a fresh activation history with it.

Official product title is Windows XP 64-bit Edition for Itanium. Normal (non-EFI) versions of the OS will not work. No other MS OS version (that I am aware of), will run on this architecture. I know this, cause I have a dual itanium in my trunk right now, waiting to go out to a forum member, pc299.
 
Interested in selling that cop of sbs? Can't help with the itanium edition but I might be interested in the sbs
