My current overclock is with an i5-2500k with a MSI GD65 motherboard.

4.5ghz
Vcore 1.352v in CPU Z at max
Vdroop Enabled.
BCLK 100
(I've just disabled Spectrum Spread, but have not tested whether that makes a difference to stability)

Now it's mostly stable, but will crash if I leave it overnight Folding. So was wondering if I should change the CPU PLL, which is currently set on Auto and I believe Intel set it to 1.80v.

Bit-tech says I should set CPU PLL to 1.9v. However I read else where that Intel says 1.89v CPU PLL should be maxium, and a few others on various boards who say that lowering CPU PLL to less than 1.8v helps with the overclock. And a few more set it to 1.8125v.

Problem is, they all seem to be using Asus boards as it seems to be more popular than the GD65 I've chosen. Would it be alright you reckon if I just followed Bit-tech's settings? (I've not changed VCCSA or VCCIO because I haven't oced the ram or set BCLK over 100)

1.9v for the PLL is a bit high. Mine is 1.7 and I'm fine. Start low and work your way up.

I doubt that PLL is affecting your overclock at 4.5 ghz.

If you install Windows 7 SP1, you can use the newest linpack binaries with linx that support avx instructions. This will stress your system more thoroughly and bring out any instability. I'd then run prime95 blend overnight.

I also found that stress testing with 1 thread was also needed to stop BSODs when the processor was doing light work. I had to add a little more vcore to fix this problem.
