would two evga 8800gts sc's in sli be held back performance-wise by an c2d e6600 cpu? 3gb of ram @ 4-4-4-12.

You would definitely get more frames if you overclocked. These newer cards have so much bandwidth that more CPU power you have, better it performs. On top of that you have 2 cards in sli.

But no you won't be CPU limited because these core 2 duo is about fast as you can get for the general public.
