I am building a new rig in a Phanteks Enthoo Evolv case with a fan hub on the back of the tray.

Is there any disadvantage to not plugging the radiator fans into the sockets coming off the waterblock vs using the fan hub instead?

nope, you can run without any kind of troubles or issues your fan separated with your desired fan controller or directly to the motherboard.

Of note you likely do want the RPM lead hooked up as a lot of motherboards won't boot. Plus if something does go cattywampus with the miss pump you'll know!
 
I plugged the block into the CPU Opt header on the board. The fan hub has the CPU FAN bit.

Def good to monitor!
