Component conversion off 8800 GTX, or DVI/HDMI cable?

i'm going to take a guess that the DVI to HDMI converter will offer better quality picture than the s-video to component dongle....

DVI/HDMI. It's digital, wheras component is analog.

Correct me if I'm wrong, but a component cable is in essence a very high quality S-video connection (using 3 cables) for HD.

Not exactly. You are right that component and s-video are both analogue and that component is higher quality, but they are rather different. S-video is a 2-way separation, it does luminescence on one pair of wires, chromanescence on another. Component does full colour difference meaning luma on one wire, luma minus blue on another, and luma minus red on the third. Also the wires are all coax cables with the correct impedance for video.

The upshot is that S-video is only good to SDTV rez, whereas component can do HDTV. S-video is (usually) better to use than composite, but component is much more capable.

Go with the digital when possible.

Even though component is analog, that's not the only flaw, as data from your graphics card will probably pass through a large amount of colorspace conversions before even hitting your screen. Jumping from YV12 ro YUV to RGB etc, its icky.
