We've got a NAS device with a quad port 1000 Mbps NIC which then runs into a Cisco 2960 gigabit switch (managed). I was able to configure the NIC's on the NAS to use 3/4 of the ports and bind them together using IPMP however I'm being told that unless I configure this on the switch side, I wont see the benefit of binding those three ports together. My question is how hard is it to bind three specific ports on the switch side so that data can be passed through a larger path rather than being bottlenecked through individual ports?

Its very easy.. The Cisco term is Etherchannel. It can either use LACP, or PaGP, or be hard-set on. Make sure the other side uses the same protocol. To actually configure it, look up the 'channel-group' interface commands.
