Changing HDD from IDE to AHCI in bios

If I change the hdd from ide to ahci does that change any data on the hdd or just how the bios reads the drive?
 
It doesn't change any data on the drive.

Be aware that if your going to change from IDE to AHCI while Windows is installed. Your going to get a BSOD.

Search google for the registry edits necessary to make Windows boot after the change.

But I could always change it back to avoid the BSOD, right?

If you change it to AHCI and it BSODs on boot, then yes, you can normally set it back to IDE and it'll be fine. Best bet is to use the instructions oddmanout posted and set it up before rebotting and changing it.
