As with all OC's mileage will vary. However, by and large certain models can OC pretty high. One of the two workstations I use at my work has a accessible BIOS. With the stock Intel heatsink I cranked the 2.4Ghz NW Cel up to 3Ghz on default voltages. I believe 3.2-3.3Ghz is about where those guys top out on stock voltage. If you have a aftermarket cooler and can pump another tenth of a volt or two, mid 3Ghz speeds could be likely.
 
If your ram can go higher try raising your FSB that'd be the best way to see a more noticeable overall performance increase
