Can triple channel DDR3 be used in dual channel?

More specifically, can I use my Mushkin DDR3 1600 memory, which are triple channel sets ( 2 sets of 3x2 GB), in a new Sandy Bridge mobo? I'm contemplating going to a Z68 mobo from X58 simply because my X58 fried yesterday and I might just upgrade the mobo and cpu, which is a 920, to a 2600k and z68. I have 12 GB of triple channel memory, so would I be able to use 4 of the 6 sticks in a Z68 mobo for 8 GB of memory? I realize this would lower my memory capacity, but would I really miss 4 GB? My intuition says yes to compatiblity, but thought I would check with you guys first before I decide.

My other choice would be to just stick with the 920 @ 4.2 Gz and buy a new X58 until the next generation of Intel cpus/mobos.
 
Yeah it should work fine, kits are mostly marketing BS the modules don't care how many channel the system is.

If I were you i'd suggest trying to get another x58 board, upgrading to a 2500K doesn't seem worth it to me especially as you would be downgrading the ram.
