can cat 5 handle 1gbit cards and hub?

CAT5 isn't rated to, but if your cables are short enough (50 feet is what I've heard) then it might work with Gb equipment.

CAT5e is rated for Gb use, however. Just be good on your twists if you're hand-making cables.
 
Per GigE spec all you need is 4-pairs of Cat 5.

Not even 5e or 6. Just plain Cat 5 will get you up to 100 meters.

This is my understanding as well.

Our entire 250+ server infrastructure will full a gigabit backbone is wired with CAT 5e and it's never had a problem.

Talking to a CCIE friend of mine a while back, the only time where you going to require CAT 6 is when you are using 10gb.
 
Yeah, I've run GigE about 150 yards on Cat5 and compared it to Cat5e and Cat5e+ in this school, just to see what the lossiness would be. . .negligable. If you're really concerned and have the scratch, you can drop fiber and get a couple of transievers, it's almost reasonably priced (depending on your deployment).

If you're doing this shit at home, what the dill, go wireless. Run a string to your gaming rig for low latency and don't worry about the LAN. When's the last time you felt bottlenecked at 10 megs a second?
