I see a lot of builds with neatly routed cables. Mine don't look nearly as neat, but cables are organized and routed not to interfere with airflow. Function is there, fashion not so much :) The main difference is that I don't have as much cables behind the motherboard tray.

The main reason is that many cables, especially the 24-pin one, are very stiff and they seem to put too much stress on the components that I'm connecting them to, or would require quite aggressive bending of their own. How do you guys go about this? Bend the cables really hard and/or not mind the stress they make on the connectors?
 
IMO the short answer to your question is "bend the cables really hard" if it is a choice between that and putting undue stress on the connection. The problem with your question is that each build experience is so different and what one person sees as undue stress, others may not.
 
easiest way to get your cables to bend how you want them is to heat them up with a heat gun or blowdryer. car and bike manufacturers do the same thing to get harnesses to fit into the space requirements they need to. once you heat them up they can be manipulated to pretty much whatever orientation you want, and when cooled down will retain said orientation. works like a charm.
