Hi,
A friend recommended that I check in here for advise on a new workstation I am building. So, here is my plea for said advise
Purpose:
I am building out a new workstation to take over for my Athlon 64 (3400+, s754). The A64 can't keep up, so it will live a quiet life in the server room from here on out. The workstation will be used for work purposes, so gaming performance is of absolutely no importance to me. The OS will be Linux (Suse, and possibly a Gentoo install if I get bored), primary applications will be VMware (3 - 5 VM at once), nessus, nmap, light database work (MySQL), web browsing, playing MP3 files in the background, and firing up a video after hours.
Overclocking:
I plan to overclock the Opteron 165. How much depends on what it can do, but I'd like to hit 2.4ghz.
Graphics / Video:
I need support for 4 displays - 1 2001FP, 2 x 1907FP, and 1 TV-OUT (S-Video)
Other considerations:
I prefer the system to be quiet(er) if possible. I cannot tolerate the loud fans and such while working. My case already has 8 92mm fans (Panaflo's) installed, so I would prefer not to add too much in the way of noise.
Parts (Already purchased / already owned / decided upon):
1 x Opteron 165 (ordered from Monarch)
1 x Antec SX1440B (14 bay tower case, a personal favorite, I have two of these)
1 x NEC DVD-RW (can't remember the model, but it has yet to burn a coaster 3500A I think)
1 x Floppy drive (3.5", legacy support...)
1 x 2001FP (own it, use it, like it ok)
2 x 1907FP (planning on picking up on eBay for ~$250 each. Open to options for monitors)

3 x SAMSUNG SpinPoint P Series SP2504C 250GB 7200 RPM SATA 3.0Gb/s Hard Drive - OEM
Notes: planning on RAID 5 here. Every hard drive I own in each system except my laptop is in RAID 5 or RAID 3, not going to change

1 x DFI LANPARTY UT nF4 SLI-DR Expert Socket 939 NVIDIA nForce4 SLI ATX AMD Motherboard - Retail

Video Cards
2 x MSI NX7600GS-T2D256EH Geforce 7600GS 256MB GDDR2 PCI Express x16 Video Card - Retail
Notes: see previous statement - looking for 3 x DVI output and 1 x S-Video. I will not be playing games, at least not any Windows games
Power Supply
1 x Antec TRUEPOWERII TPII-550 ATX12V 550W Power Supply - Retail
Notes: (thoughts? power supplies scare me - so easy to get a lemon)
CPU Cooler
1 x Thermaltake Big Typhoon CL-P0114 120mm Cooling Fan with Heatsink - Retail -
Notes: I heard good things about this. I just want enough cooling with as little noise as possible to get a decent overclock
Ram
1 x G.SKILL Extreme Series 2GB (2 x 1GB) 184-Pin DDR SDRAM DDR 500 (PC 4000) Unbuffered Dual Channel Kit System Memory Model F1-4000USU2-2GBHZ - Retail -

Notes: I figure I'll need cables, and the Antec case is... rather... large
I throw myself on the mercy of this forum - tell me what to buy. Any suggestions would be great... as you can see, I'm not dead set on much (CPU, Case, DVD-RW). Thanks!
