Building a Server/gaming pc this summer?

Looking to build a large plex server this spring, along with the ability to maybe game on it? Or I may just run native plex off it to my main tv, and use a seperate for gaming, as I think this is best for stability.

The case I purchased is

Looking at it, 10 bays plus if I throw in a 3 to 5 that's 15 drives plus a drive slot for an SSD for the os.

I'm asking for your input on the best software option for this, I'd like to use a RAID setup to offer some redundancy, but have it expanding.
So I can start with 10TB drives, and add more or larger as I expand.
I'd also like to run a plex server on it.

TL;DR:
Need software and controller suggestions.
