OK, so I put two 250GB HDs in RAID 1 on ICH5-R, but now I need the space and am not so worried about the hardware failing, is there any way I can break up the array and have all the data on one HD go away and keep the data on the other HD?

sure, you should just be able to remove one of the drives if Im not mistaken
not sure of the exact proceedure not having that chipset\controller

but if a drive failed, (removed) it would immediately be a downgraded array,
but still accessible, then access the RAID BIOS to see what options are available if there is no manual

reattach the other drive to a none RAID Channel if you have one and then reforamt it from Disk Management
