How do people layout high-end, high-quality coffee-table style books?

Surely they don't do it in Word. Anyone know what software you would use?

InDesign would be the best choice, although I think most people use Quark, mainly because it's just been around a lot longer. InDesign is much, much better though.

I don't know know what exactly you are shooting for, but TeX(or its derivatives) is often used to produce beautifully typeset books and documents. I use latex for a lot of my classes and its output looks much better than most common word processors.

the idea is to pull together/develop a high-end "coffee-table" book. Basically showcasing a particular type of photography.

Yeah LaTeX is really designed for math / scientific / technical writing. For something like that I imagine some other kind of software would be better suited (I don't have any suggestions as to what though).
