How much is this card actually overclocked from the factory? and why cant i just buy a cheaper company and just OC it myself? Is there a great difference?

Bfg 6800gt Oc...

Agreed, and with recent benchmarks the BFG is outshining all other 6800GT makers. Plus BFG offers a Lifetime Warranty... the only company that comes close is PNY with a Product Lifetime Warranty.
I personally bought the BFG 6800GT OC and love it. No problems at all. I am running it at 428/1110 24/7 @ 69c.

And my eVGA GT does 430/1150. There's nothing special about BFG besides their warrenty.
