Currently Need for Speed Rivals and Forza 5 is out now, I haven't played them so I couldn't give you my experience with them. Later this year another Forza title and the crew is coming out.
On my xbox I've enjoyed Assassin's Creed, Watch Dogs, and Metal Gear Solid. Just know with Metal Gear Solid its a good game, probably the best controls for a metal gear game. But there is no value to it, its very short.
I enjoyed dead rising 3 for just mass murdering zombies. I gave it one play through and that was all. Ryse was the same for me, one play through since the game play was meh but the graphics were wow. Watchdogs is decent on the xbone. NFS is a fun game and is great for messing with other people online.
Killer instinct, Max the curse of the brotherhood, Forza 5, crimson dragon is fun rail shooter kinda arcade feel to me. Dead rising 3 of course especially fun with newest dlc.
Forza Horizon 2 will be out soon in September.

I already agree with some of the other games already mentioned (Dead Rising, Forza, etc.), so to add something not mentioned, I'm still enjoying Titanfall. I believe it's 33% off right now, if you're a Gold Member. Child of Light is a pretty good (but fairly short) RPG, but it's also available on pretty much every platform.
Need for Speed is pretty good, although it's shorter than it initially seems.
If you like fighting games, Killer Instinct is surprisingly good. I even wanted to dislike it, but it's not bad.
Dead Rising got old really quickly for me. I recommend downloading the demo and giving it a go since it's the real version of the game with a time lock. If you like the demo, you'll like the real thing.
Watch Dogs has a large open world element to it with driving, so that might be appealing. It's more GTA than a real racing game, though.
The only games I think are worthwhile on the Xbox One as a mostly PC-based gamer are Forza 5, the upcoming Forza Horizon 2, and the upcoming Halo Master Chief Collection you already mentioned, and probably Destiny. I might get The Crew and GTAV for it later this year just because the console versions will likely have larger online communities/player bases than the PC versions.
I'm sure there will be more over the next couple of years... it's usually a pretty dry spell for new consoles for the first 18 months or so other than 2 or 3 "killer apps."
Most games you can get on sale from MS ebay store for like $20.
Ryse has a quick playthrough and the multiplayer is fun worth $20 or as a rental.
Then there's Forza 5, Dead Rising 3, Titanfall, BF 4, Guacamelee and Plants V Zombies just went on sale digitally for $23.99. Most of those are on sale or you can get at a steep discount as their replacements are coming out within the next few months.
