best internet sharing for a company?

I need a little help. Currently the company I work for uses some crappy proxy 3rd party programs. They suck in my opinion and I want to set this network up right. Right now I'm working on a windows 2003 server box that has DHCP enabled/DNS enabled. I can make my clients point to the DNS server to connect to the web but I don't know a way to log what they visit.

Does anyone have a good way to log web access and get reliable web access 24/7 so I can stop being called in the middle of the morning ... dang 24/7 operations :(

What's your 2 cents?
 
Size of this network might help, size of internet pipe. 6 node, 60 node, 600 node, 6,000 node, how much/detailed monitoring you want/need, etc.

A good *nix distro router like Endian, Untangle, or IPCop might be useful. Untangle has some awesome reporting abilities...it's designed for heavy business use.
