BASE linux install for a NAS server

I was looking at buying a small NAS server and the ones that did what I needed were $250-$300 cheapest.
Then it occurred to me I a spare PC with embedded SATA RAID and also 1000 MBT embedded Ethernet. It seems a Linux file server is in order.
While this type of setup is pretty basic, I have never done one and not that great with linux command line work.
Was thing maybe have it boot from a USB thumb drive and have a RAID1 setup that is 100% data.
Any suggestions how to do this??
