Backup Question

I currently have 2 drives in a Raid 0 configuration and would like to add another internal drive for backup purposes.

If I image my 2 drives that are in a Raid 0 configuration to the one backup drive, then if I need to restore that image, will I need to do a raid 0? Or can I just restore the image to a single drive, non raid configuration?

you would only be able to restore the image to a single drive with a size larger then the imaged hdd
 
Great, that's exactly what I would like to do.

It's starting to make me nervous that one of my drives might crap out and I will lose everything.
