Got a mac os harddrive and need to backup what possible files we can. HD maybe shot but was asked to 'try'. Anywho, is there any software I should look for inregards tobacking up a MAC harddrive using win7?

I think your best bet is attempting to grab a complete (bit-for-bit) disk image and then putting that image onto another hard drive of the same size.

Barring that, grabbing the /Users folder will get all of their home folder stuff, and the /Applications folder all of their applications (though not all of them will have their settings). If you can get the /Library folder, that should grab any and all application libraries/support files for the rest of them that don't save everything they need inside their package in /Applications.

To put these back onto a new hard drive with a fresh Mac OS X install (make sure it's the same version as when it died), just put the files in place in the same structure and it should work fine (so long as they picked the same username, case sensitive).

I would do a bit for bit backup from a linux livecd if you can not use the mac to do the backup.
