Automatic Duplication (fake RAID)

I just bought a Rosewill SATA controller and 2x WD5000AAKS drives to put into an old Dell 1.8 ghz P4 for a file/media server. It simply serves as a file server for my network and a media server (w/ Tversity) for my 360. I was originally planning on buying Windows Home Server, but I wanted to try to go with a lower cost solution. I want to stay away from RAID arrays just because I don't feel comfortable dealing with arrays. Something has always bothered me with them. I really like WHS's auto-duplication feature which I believe just makes an exact duplicate onto the other drive w/o any fancy array stuff. Basically if one drive failed, I could just throw a new one in and copy over the files.

My question:
Is there a program or another way to simulate WHS's automatic file duplication? I am currently using XP Pro because of Tversity but if there is a similar Linux solution, I am open to that as well.

for linux -- rsync and a little scripting.

for windows -- robocopy, synctoy, etc
