What is the difference between the ATI cores. For example cores include,

x1950xt
x1950Pro
x1950XTX

What is the advantage/disadvantage to each of these cores?

Or is it just about price and performance.

Well for on the x1950pro uses less energy than the other two because it is the only one of the three that is built on an 80nm tech. For the other differences do a web search for benchmarks and number of pipes etc.
