Can i use 3 gtx 680 watercoled on a asus rampage gene IV lga 2011?

It has PCI Express 3.0 x16 3 (x16, x16, 8)

Only if you can find single-slot GTX680s, which I have not seen. The PCIe spacing is such that you can't fit 3 of any dual-slot GPUs.

The guy from asus said no because he said first 2 pci-e are conected but not the last one!?But i dont trust the asus tech guys that much....he did not seem to be sure...

Not sure why the last won't be connected...

And yes, 3 7970s should work as long as you get the single slot brackets. The 680s definitely will not work due to having one DVI port on the second bracket, and the double stacked PCI-E power design.
