Working on a box for a friend here, with the ASUS P5E-VM HDMI mATX board. Problem is, there's a difference between what I set in BIOS and what AI Suite reports. 1.9v set in BIOS -> 2.05v according to AI Suite, and 2.0v set in BIOS -> 2.3v in AI Suite! Now, my instinct would be that AI Suite is full of crap as I don't really trust software voltage monitoring. But I wanted to get some feedback from other ASUS users out there, because if I set it to 2.0 (which is the manufacturer's highest recommended voltage for the RAM) and there really is 2.3v of juice running though it that would obviously be a very bad thing.

i actually created an account the post the exact problem you have. i even have the same board. and i'm getting the same results you are getting.

i thought maybe my RAM was defective because i couldn't get it to work at 1000Mhz/5-5-5-15. the most i got was 900Mhz. but then i tried using AI suite (because i noticed 2.3V and that was freaking me out because my RAM is rated for 2.1). maybe i was overvolting the RAM....

i set it to 2.0V and to 1000Mhz in AI suite and i was able to reboot. when i went into the BIOS it was 1.88V and 925Mhz or something like that, and UNABLE to POST when i saved and exit....

i have since uninstalled AI suite and just trust the BIOS. i also swapped the RAM to the other dual channel slots and i can go to 1000Mhz. i think my northbridge is messing up the RAM....because i'm still using onboard video because i'm holding out on getting a new video card until the 4870 and GTX+ are released because then there will be MASSIVE price cuts.
