adding text to a avi

I would like to add some text to an avi movie so that I can describe how to perform a task.

What I am doing is using CamStudio to record the task so I can get people off my back on going out and training them. Training them as a group is not a big deal but its training x6 groups. Two of them work midnights and there are those that never make it to the training. So I figured create an AVI recording tasks. I know CamStudio will record voice but I don't have any mics around at the moment. Which leads back to the question is it possible to add text to an avi? Preferably free/open source
