Hey i want to add in a 8800GS to my box that has 2 9600's running,

what folders or whatever can i copy and rename to make the 3rd client or would i need delete everything and restart with the multi gpu guide since they now have files and other data in them?

If you're using the GPU console client you can copy one of the existing folders and change the machine ID in the client.cfg file to something different than your other clients. Then, delete the work folder and queue.dat file. When you make a shortcut on to your desktop, add the -gpu 2 switch along with any of the preferred switches you normally have for your clients. If you have two existing clients, they should also have the -gpu 0 and -gpu 1 switches respectively.

This is what I have done on my setups.
