850 pro 256g m.2 or 860 evo 500g ssd for os?

I'd use the 256gb drive for the OS just because it is smaller. Easier and faster to backup the OS drive that way. Games and apps on the bigger drive.
 
I assume that you'll have a conventional HDD, too?
If so then you just need to decide what stuff goes on the fast/SSD side and what goes on the slow/HDD side.
I lean toward putting as much as I can on the SSD, so I'd choose a 512 GB SSD.
