7970 discrete graphics for 55" LCD?

I'm using a 7970 to power 3x30" U3011 LCD's. 2xDP, 1xDVI (setup used for work, so this works fine with 1 card... didn't much care for all the eyefinity issues/performance)

If I connect a 55" LCD TV via HDMI, would I be able to bypass the 3x30 monitors and game on only the TV? Games played this way would be for, the numerous, console ports and played with a wireless Xbox 360 controller.
 
Shouldn't you be able to configure EyeFinity as you like? Maybe save a few preferences, with one being 3xdisplay, and another with just you 55" set as primary.
 
Thanks... I never did have any luck using the preferences. I tried setting up 3x3 and 3x1 profile which were assigned to hotkeys. But they never worked, I always had to rebuild each configuration each time I needed to switch.
