I'm trying to decide which one to get and I was wondering if the extra $100 for the GT was worth it. Is there really a big performance difference? What advantages does the Gt have over the non GT?

It's worth it. The GT is way faster mainly because of the GDDR3 vs the NU's DDR1. In some games, like Doom 3, you won't notice a huge differance but in others, like Far Cry, you will. So 256mb GDDR3, 4 extra pipelines and a faster clock speed plus the ease of overclocking to Ultra speeds, if you feel so inclined, make the 6800 GT well worth the extra cash.
 
It depends on your budget.... it seems as though more people are hunkering down and getting the GT. As the 6800's are in ample stock everywhere. And the GT's are just finally starting to stock up at places.

But if you can't afford the GT, the 6800 vanilla is still a great card.

Its not like the difference in a 9600pro/xt vs 9800pro/xt (suck vs good)
or a 5700 U vs a 5900 U/xt. (suck vs good)

the 6800 vs 6800GT is....very good vs great

win win situation.
