I am planning to add another 480mm radiator to my PC, but my motherboard only has 6 fan headers. How would I power the 8 fans?

Molex to 3 pin adapters for the other 2, or a fan controller.
I don't recommend a splitter when using the motherboards ports.

Phobya makes a nice molex to 3pin with 6 headers on it, for about $6. It's a tiny PCB with velcro on the back. I'm using two for my 2x 360mm in push-pull. There's no reason for rad fans to run at different speeds and, if you select the right fan, no reason for them not to run at full speed.

Asus makes an add-on fan header available. Part # EAMCAD647823.
This comes with the X99-Deluxe, but can be ordered separately I think.

If you have PWM fans, there are splitters that allow you to get power from molex while using PWM from the motherboard to control speed. Otherwise, if you have low current draw fans (less than .5 amps or 6 watts per fan), a motherboard can handle two on a splitter. For reference, my 2150 rpm GTs draw about .1 amp each, while my 1500 rpm Aerocool LED Sharks draw about .4 amps each.
