Thinking it might be time to upgrade since powersavings alone might even me out. What type of performance will I see from the switch? I primarily game at 1080p w/ 120hz monitor.

5870/5850xfire vs. 7970

It's unclear from your post, what exactly do you have now? Do you have a single 5870 or 5850? A pair in crossfire?
2x 5870 in crossfire would very likely match and even exceed the performance of a 7970 in many situations, especially at 1080P. It's going to depend more than anything on how a particular game works with a particular architecture. Some games clearly prefer VLIW5 cards such as the 5870.

If you have a 5870 + 5850 crossfire set-up currently then at 1080p I'd expect similar performance from a single HD 7970. In some cases your current crossfire set-up will outperform it and in other situations the single HD 7970 will have a slight edge (especially once overclocked). However, the single HD 7970 is the clear winner when it comes to power consumption.

I have a 5870 Xfired with a 5850 on an i7 2600k @ 4.5ghz.
I would imagine you'll get around $140-$160 each for your 5850/5870, and pay $550 if you are lucky for a 7970, possibly/probably more). So you are looking at around a $300 upgrade cost, not terrible, and I would expect you'll see some noticeable improvements in gameplay, 5xxx series cards were never great at CFX scaling.
Another option is Crossfire with 6950 2GB, they scale better than what you have, and would be more powerful than a single 7970, at roughly the same price point.
