5.1 or 7.1???

It's not just the fact it's "more speakers" when you look at the position you actually place the speakers you can kind of see the benefit. instead of left/backleft'ish you have a distinct left and back left... it's makes a big diffference being able to accurately tell what direction a sound is coming from... It just adds an extra level of immersion, it's actually helpful in CS:S and probably BF2 if I'd actually play the game. (But 7.1 directional audio is supported in quite a few newer games)
If you're just listening to like... music in Empire Earth or something.. then.. don't bother, 5.1 can fill your space just as well, or well enough where you really shouldn't care
As to the movies comment... yes a lot of movies have 5.1.. there are no movies I know of encoded for 7.1... the best I know of are a small handfull of movies with DTS ES.. which is 6.1 (6.1 has a single channel in the rear, opposite your center, otherwise it's just like 5.1)
You can of course use something like Logic 7(HK) or Dolby Pro Logic IIx to extrapolate audio into 7 channels.. but that's just a processor doing it and not really someone's audial intention.
Majority of music is 2 channel with a few exceptions now encoded in 5.1 audio (on dvd-audio discs and super audio cd's)
