so I have this LG 34" ultra wide 2560 x 1080, does the width have an impact on FPS in games? Would moving to a 27" give a boost? pardon my lack of [H]ardness
 
Mainly the resolution (number of pixels) matters. With the same system 2560x1080 has lower performance than 1920x1080 whereas 2560x1440 would have lower performance than either.
 
More pixels your GPU has to render the harder it is. So 2560x1080 is harder to render than 1920x1080, but not as hard as 2560x1440 which I assume the hypothetical 27" will have. This is the simplified version. The increased FOV that Ultrawides provide also add GPU loads that the 16:9 equivalent does not have, but still in most scenarios more pixels = worse performance.

Actually no my 27" is just a standard 1920x1080
