I've come to the conclusion that a whole new build is in order, as my old system became my server, and the laptop just isn't quite cutting it at this point for space.

I'm looking for a gfx card which will support at least 3x 24" monitors, as I'm looking to get more real estate for work. I'd like to do this as a single card, as I don't want to get crazy just to handle office spreadsheets and databases.

As I'd also like to do the occasional Starcraft II game, should it matter which gfx card I go for?

I've been really impressed by Kyle's video of the Eyefinity setup, but sadly, I don't even know if Nvidia does 3x monitors from 1 gfx card.

All the 24's I'll be getting will have DisplayPorts, as I get great deals from Dell.

Currently I have the following, which I built/bought after much research
Server: AMD x2 3800, 3gb ddr, geforce 6500 --- 5 years old?
Laptop: Dell e6410, i5-520, ssd, 8gb ram, win 7 x64 pro, built in graphics --- bought/built this year

New build: ??? --- target under $1k for all computer parts (excluding monitors)
 
I own the 6850 and I'm getting the corrupt mouse cursor and the Pylon issue right now, and it's pissing me off. However, I expect these issues to be resolved in the future so I still love the card. For 3x 24" displays + Playing SC2 on just one of them I'd recommend a 6850 at minimum.

For three monitors on one card you are limited to ATI. That is if you want to game with all 3 monitors. If not, you could do one good card of any brand and then one cheap card for the third monitor.
 
You need two nvidia cards in SLi to run surround.

Look at GTX 460 1GB models.....around 179 each.

hell of a deal. a single 6870 will work as well. the 6970 should be coming out about the seconded week of December. these are 2gb cards and might be better but probably a LOT more.

for a single card setup your looking at AMD only
 
With the 6950/6970 around the corner I would wait a bit. Because they are 2gb cards you will benefit greatly running that high of a res with the extra ram.

If the 6950 is around ~300, you could get that, an X4 or i5, 4gb of ram and have a slick system for around 1k.
