2 different brand HDDs RAID?

Yup, I have a 250GB WD w/ 16MB cache and 250GB Seagate w/ 16MB cache, both 7200 RPMs. Can I run them in RAID (for the extra speed) or do they need to be the same brand? I also have a 500GB I use simply for storage, and the reason I'm thinking about this is because the 250GB I have dedicated for storage is... empty.

Yes, you can use different manufacturers, but I wouldn't necessarily recommend it.

How do you plan on RAIDing this?

Depending on who you talk with they actually recommend doing this if they are of similar spec. I have heard google among others do this. The theory goes if you get different manufacturers in a RAID array you are more likely to have disk failures spread out. It makes sense as if you get a bunch of drives together they were probably manufactured around the same time.

I never did any real research into it but sounds plausible...

I have been running two different manufactures in my RAID5 setup for 5 years now. I have issues with one specific brand, and when those crash, I replace them with the brand I have the best luck with. When I first built my array I made sure to spread out my purchases from different stores, or log periods of time between purchases from the same store. Just trying to make sure each HDD is from a different production lot. 7 years ago I had 2 HDDs fail at the same time. Luckily it was just a JBOD, but still, it makes me paranoid.
