With the soon available Tri-SLI systems, what are the PSU options as 6 x 6-pin PCIe power connectors will be needed to run three 8800 GTX or similar cards?

There are a few offerings that will do it natively. The Coolermaster Real Power Pro 1250w is one such unit.

The current Quad SLI PSUs seems to have 2 x 8-pin and 2 x 6-pin at best so can you convert each 8-pin to two 6-pin connectors without causing a fire?

Yeah a lot of those units have modified 8 pin adapters where the extra 2 pins are taps off of the other grounds that have break away adapters so the 8pin will split down to 6pin. Those that don't can be adapted down with a 8pin to 6 pin adapter without issue.
